There is nothing better than ooey and gooey mac & cheese in my opinion. ESPECIALLY on a rainy or chilly day! I love the creaminess, the smell, the warm feeling you get when you eat it. It really reminds me of childhood!
My kids like it, finally! At first, they didn't even want to touch any mac & cheese! Would just slap the food with their spoon and utter the word “EW!” Well, with this recipe, that all changed.
What makes this recipe even better is it is made in the incredible Instant Pot! This machine is a game changer!! It cuts down on prep time, cook time, and CLEAN time!!! Do you hear the angels??

RECOMMENDED MATERIALS & INGREDIENTS
Instant Pot Mac & Cheese
This creamy macaroni and cheese dinner is the best weeknight dinner! One your kids and spouse will want week after week!
Ingredients
- 1 pound dried macaroni
- 4 cups water
- 4 tablespoons butter
- 2 tablespoons mustard, Dijon preferred
- 1 tablespoon salt
- 1 tablespoon hot sauce, optional
- 1 12 ounce can evaporated milk, or 1 1/2 cups whole milk
- 8 ounces cream cheese
- 1 pound sharp cheddar cheese, shredded
- 1 cup liquid cheese sauce, optional
- Parmesan cheese for topping
Instructions
STEP 1 - GATHER INGREDIENTS
STEP 2 - ADD INGREDIENTS TO INSTANT POT
In the stainless steel insert of the Instant Pot, combine dried pasta, water, butter, mustard, salt, and hot sauce.
STEP 3 - LOCK INSTANT POT LID
Make sure you close the vent!
STEP 4 - SET COOK TIME
Use manual mode to set Instant Pot to High Pressure for 4 minutes.
STEP 5 - ALLOW INSTANT POT TO COME TO PRESSURE
This will take about 10-15 minutes, then it will count down from 4 minutes.
STEP 6 - RELEASE PRESSURE
Once Instant Pot finishes 4 minute countdown, immediately turn pressure release valve to venting (called Quick Release) and turn Instant Pot completely off.
Important Note: If any liquid comes out of the pressure release valve, use wooden utensil or pot holder to close the valve. Wait a minute and try to release the pressure again. The Keep Warm mode should NOT be on to prevent overcooking the macaroni.
STEP 7 - OPEN INSTANT POT LID
Once Instant Pot has released all the pressure, turn the lid to open. Keep lid angled away from your face to prevent steam burns.
STEP 8 - STIR IN OTHER INGREDIENTS
Stir in evaporated or whole milk, followed by shredded cheese, cream cheese, and liquid cheese.
Continue stirring until cheese is completely melted.
STEP 9 - SERVE
Serve immediately or switch Instant Pot back to warm setting to keep at a warm temperature.
Add some grated Parmesan cheese to add a bit more flavor!!
