How to Make Soft & Chewy Oatmeal Cookies

It is a chilly, rainy, overall dreary day here in Southeast Michigan. So, I thought I’d make some of my soft & chewy oatmeal cookies because, well, cookies in general are delicious and this housewife has a nasty b*tch of a sweet tooth at night! Lol!

There is just something about the smell of cookies in the oven… I dunno. It screams childhood, happiness, safety, home. These chewy oatmeal cookies do not disappoint! Soft on the inside and a slight crisp on the outside!

I just need to hide a few from my little piggies a.k.a. my kids!! The Hubs doesn’t really care for sweets. I know. I know. He’s crazy. He did go to the grocery store to get the ingredients so, you know, I’ll keep him.

Soft & Chewy Oatmeal Cookies

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

These oatmeal cookies are the perfect combination of a crisp-but-not-crunchy exterior and a soft-and-chewy inside. YUM!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 whole egg
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups old-fashioned oats
  • 1 cup add-ins (chocolate chips, raisins, cinnamon chips, etc), optional

Instructions

  1. Preheat oven to 375 degrees F
  2. Gather ingredients.
  3. Line one to two baking sheets with parchment paper or a silicone baking mat. Set aside.
  4. In a small bowl, combine the flour, baking soda, baking powder, salt and cinnamon. Set aside. oatmeal-cookies
  5. Place softened butter, granulated sugar and brown sugar in the bowl of a stand mixer and beat until combined.oatmeal-cookies
  6. Add egg and vanilla and beat on medium speed until the mixture is light. Roughly 30-60 seconds.oatmeal-cookies
  7. Add dry ingredient mixture and beat on low speed until just combined.oatmeal-cookies
  8. Add oatmeal and beat on low speed until combined.oatmeal-cookies
  9. If using, add-in ingredients and stir until evenly distributed in the dough mixture.
  10. Use a 1 1/2 to 2 T (Tablespoon) cookie scoop to measure out the dough.oatmeal-cookies
  11. Place scooped dough onto the prepared cookie sheets. Repeat until all the dough is used.oatmeal-cookies
  12. Gently press down tops of cookies until they are flat.oatmeal-cookies
  13. Bake in preheated oven for 8-10 minutes until the top is just set.
  14. Let sit on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.oatmeal-cookies

Notes

If using a convection oven, I recommend decreasing the temperature by 25 degrees F and lowering the bake time by 1-2 minutes depending on your oven.

  1. They sound wonderful. No one in my house to help eat them and will power is NOT my super power. I think I will forward this to a friend and hope she will make them (and share a couple of the with me).
